sushi grade salmon for sashimi or nigiri.
what you need:
farmed atlantic salmon from costco (get the most orange and one with less rips in flesh)
salt
paper towels
how to make:
get salmon out of packaging and pat dry.
coat in heavy sea salt and leave for 40 min - 1 hour.
pull out of fridge and drain liquid from the curing process.
using the four finger process, cut the pieces into sushi blocks.
cut and enjoy!
